I found a recipe for Lemon Blackberry Muffins and I love that combination of fruits but I wanted to add more protein and not put any added sugar so I developed this new recipe. It has a different type of texture…it is kind of like a bread quiche. It has a great flavor though and as I always like, it is easy to make, pack and go. You do have to eat this with a fork though
If you use dry curd cottage cheese in place of normal cottage cheese it will be more bread like then quiche-y.
Lemon Blackberry Protein Bar

Ingredients
- 1/2 cup oat flour
- 1/2 cup whey protein
- 1 cup unblanched almond flour
- 1 cups reduced fat cottage cheese
- 1 lemon
- 1 lemon zest
- 2 cups egg whites
- 1/2 cup ground flax
- 1 Tbsp vanilla
- 1 tsp cinnamon
- 1 1/2 cup blackberries
- 4 Medjool dates
- 1 banana
Directions
- Pre-heat the oven to 400
- Mix everything together in a large bowl and use a blender stick or food processor to completely smooth everything out
- Pour into a cake pan and bake for about 16 minutes
