Last night I wanted something sweet after dinner so I came up with these! They were quick and easy to make and taste very sweet for not too much sugar! They remind me of lara bars, especially after storing them overnight in the fridge. These would be perfect to take on a bike ride or run!

No Bake Peanut Butter Oatmeal Cookies

Ingredients

  • 3 Tbsp coconut almond milk unsweetened
  • 1/3 cup coconut sugar
  • 1 Tbsp coconut oil
  • 1 tsp vanilla
  • 1/3 cup pb2
  • 1 Tbsp flax seed,ground
  • 1 cup old fashioned oatmeal
  • cinnamon

Directions

  1. In a pot on the stove boil the milk, coconut sugar, and coconut oil
  2. Once it boils take off the stove and add in vanilla, pb2, flax seed, oatmeal and cinnamon
  3. Form into balls and cool
