Since my friend Nikki is visiting and was asking me to teach her how to cook, I was trying to think of something easy to show her while I was at work today. I finally decided on a healthy pizza! And my favorite part of making pizza is…..cold leftover pizza ūüôā Perfect to pair with our Green Smoothies tomorrow after our 12 mile run!

Vegetable Pepperoni Pizza

Servings: 4 (2 slices each)

Ingredients:

For the dough

  • 1 packet pizza rapid rise yeast
  • 1.5 cups white¬†whole-wheat flour
  • 3 Tbsp olive oil
  • 3/4 cup very hot water
  • 1.5 tsp brown sugar
For the sauce
  • 3/4 cup no-sodium tomato sauce
  • 2 tsp oregano
  • 2 tsp basil
  • 1 tsp garlic powder
  • 1 tsp seasoned salt

For the toppings

  • 1/4 white onion, finely chopped
  • 2 roma¬†tomatoes, chopped
  • 1 cup spinach
  • 30 turkey pepperonis
  • 3/4 cup Italian blend cheese

Directions:

  1. Mix all of the dough ingredients together and then knead for 4 minutes and let rest while preparing the rest of the ingredients
  2. Pre-heat the oven to 350 degrees and stick in a pizza stone with a bit of cornmeal spread over the top to prevent sticking for about 10 minutes (if you don’t have a pizza stone then just pre-heat the oven and use a pizza pan to make the pizza on…but don’t put it in the oven until the pizza is made on it)
  3. Combine the sauce ingredients and mix well
  4. Take the pizza stone out of the oven and carefully pull the dough out into a pizza shape and place on top
  5. Add the pizza sauce on top
  6. Top with a sprinkling of cheese, the vegetables and pepperoni and then the rest of the cheese
  7. Smear a bit of olive oil on the crust and top with garlic powder
  8. Put the pizza in the oven and cook for about 10 minutes, until the cheese melts and crust starts to brown
  9. Cut into 8 slices and enjoy!
