I was a little tired of having one bowl meals for lunch and I love Mexican food so I decided on fajitas for the week! Monday morning I made all of the meat and veggies and put them in Tupperware for the week! I kept 2 in the fridge and froze the other 3 so they wouldn’t go bad. Very easy and something I look forward to eating for lunch every day!

Pork Fajitas

Servings: 5

Prep/Total Time: 20 minutes

Ingredients:

  • 1.25 lb pork for stir-fry (small strips)
  • 1 tsp cayenne powder
  • 1 tsp chili powder
  • 2 red bell peppers, julienne style
  • 2 green bell peppers, julienne style
  • 1 white onion, julienne style
  • 1 tsp minced garlic
  • 10 small, low-carb, high fiber, whole-wheat tortillas
*light-sour cream for toppings
*Pair with whole-grain, baked tortilla chips and salsa
Directions:
  1. In a sautee pan, cook the pork until it is no longer pink
  2. In a large sautee pan cook all of the vegetables until tender
  3. Place 1/5 of the meat and vegetables in the 2 tortillas add sour cream or any other toppings and enjoy with chips and salsa
