I went over to my friend’s house last night and I wanted to bring something over that we could munch on while we were enjoying our game night. I love dipping things in stuff (very vague, I know) so I thought chips with queso would be perfect, low-calorie and low-fat of course.
Beer Queso

Ingredients
- 2 tsp extra-virgin olive oil
- 1 medium onion, chopped
- 2 cloves, minced garlic
- 1/2 cup Tecate beer
- 1 1/2 cups unsweetened, original almond milk
- 3 Tbsp cornstarch
- 1 3/4 cups shredded sharp cheddar
- 1 10-oz can original rotel
- 2 Tbsp lime juice
- 1 tsp salt
- 1 tsp chili powder
- 1 tsp cayenne pepper
- 1/4 cup sliced green onions
- 2 Tbsp chopped fresh cilantro
- Tortilla chips (multi-grain)
Directions
- Saute the onion and garlic until it is see-through
- Add 1/2 cup of the milk to the pan with the cornstarch and mix until it thickens (about 3 minutes)
- Add the mixture and the rest of the ingredients (except the green onions, cilantro and chips) into a crockpot and cook until warm
- Garnish with green onions and cilantro
