I am going to Colorado at the end of the week so I didn’t want to buy a bunch of food yesterday and have it go to waste. I found a spinach artichoke pasta on pinterest and I thought it looked pretty good so I changed it up a bit and tried it out tonight for dinner and I am just going to use the rest for my lunches during the week.

Spinach-Artichoke Pasta with Ground Beef

Ingredients

  • 14 oz whole wheat pasta shells
  • 1/2 Tbsp onion powder
  • 1/2 Tbsp garlic powder
  • 1 cup fat-free sour cream
  • 4 oz light cream cheese (room temperature)
  • 1/4 cup unsweetened original almond milk
  • 1 tsp lemon juice
  • 10 oz spinach 
  • 13.5 oz can artichoke hearts rinsed and chopped
  • 1 cup mozzarella
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 lb lean ground beef
Directions
  1. Preheat Oven To 425 F
  2. Cook pasta according to the box
  3. In a large bowl – mix everything together except for the ground beef and 1/2 cup of the mozzarella
  4. Cook the ground beef in a pan on the stove until it is no longer pink
  5. Place mixture into greased 2.5 – 3 qt casserole dish and place the rest of mozzarella cheese on top
  6. Place in the oven till golden brown on top, about 10 – 15 minutes
