On Sunday my boyfriend and I were invited over to our friends house for a BBQ. I was in charge of dessert, of course. I wanted to bring something light that would compliment a fresh BBQ meal. I knew I wanted to go with something fruity so I thought of my two favorite fruits, mango and blueberries and decided to make a cobbler. The picture doesn’t do it justice, but it tasted AMAZING. Definitely something I will make more often, especially during the summer! It is low calorie and low sugar which is great, especially considering a serving was a quarter of the pan!

Ingredients

Filling:

  • 12 oz frozen mango
  • 16 oz frozen blueberries
  • 1 Tbsp lemon juice
  • 1/4 cup sugar
  • 2 tsp cornstarch
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger

Topping:

  • 1/2 cup oat flour
  • 3 Tbsp sugar, divided
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp baking soda
  • 1/3 cup unsweetened almond milk
Directions
  1. Pre-heat the oven to 350
  2. Combine the filling ingredients and place in a 11×7 greased cake pan
  3. Combine the toppings and spread on top of the filling
  4. Bake for 40 minutes or until topping starts to brown
