I found a recipe for Lemon Blackberry Muffins and I love that combination of fruits but I wanted to add more protein and not put any added sugar so I developed this new recipe. It has a different type of texture…it is kind of like a bread quiche. It has a great flavor though and as I always like, it is easy to make, pack and go. You do have to eat this with a fork though 🙂 If you use dry curd cottage cheese in place of normal cottage cheese it will be more bread like then quiche-y.
