I was asked to make a healthy version of Tacos de Tripas or Mexican Street Tacos. If you aren’t aware, tripas are intestines. To make these tacos healthy I decided to replace the intestines with pork tenderloin instead. Quick, easy and healthy Mexican food…always a plus! I served 2 tacos each to Josh and I with a side of sweet potato chips and salsa. It was a great meal to eat on Sunday before relaxing and preparing for the week ahead.

Mexican Street Tacos

Ingredients

  • 1 pound pork tenderloin, chopped into bite size pieces
  • 1/2 sweet onion, chopped
  • 4 Tbsp chunky salsa
  • 1/4 cup shredded cabbage
  • 2 radishes, thinly sliced
  • 4 Tbsp cilantro, chopped
  • home style corn tortillas
  • salt and pepper to taste

Directions

  1. Cook pork, onion, salsa, salt and pepper in a greased frying pan until the meat is no longer pink
  2. Heat tortillas in the microwave for 10 seconds and top with meat mixture, cabbage, radishes and cilantro
