I have made this pork recipe multiple times and it always gets great feedback. It has a sweet and savory flavor which is a perfect complement to pork. I think it is one of my favorite meat recipes. The green beans are awesome as well; who misses french fries when you can have these?! I also served this meal with a handy pre-packaged salad ūüôā

Raspberry-Walnut Pork Tenderloin w/ Crispy Green Bean Fries

Raspberry-Walnut Pork Tenderloin

Servings: 3

Prep/Total Time: 60 minutes

  • 1 lb pork tenderloin
  • 1/4 cup light raspberry-walnut vinaigrette
  • 2 Tbsp honey mustard
  • 1 Tbsp fresh thyme, chopped
  • salt and pepper to taste


  1. Pre-heat the oven to 400
  2. Coat a baking sheet with spray
  3. Sprinkle salt and pepper over the pork and place on the sheet
  4. Combine the vinaigrette, honey mustard and thyme to make the sauce
  5. Spread some of the sauce on the pork and cook for 45 minutes, basting with the sauce every 15 minutes
  6. Take out of the oven and let cool, serve with extra sauce

Crispy Green Bean Fries

Servings: 3

Prep/Total Time: 20 minutes

  • 3 cups¬†green beans, ends trimmed
  • 1 cup¬†oat flour
  • 1 cup¬†whole-wheat bread crumbs
  • 1¬†egg
  • 1/2 cup¬†coconut milk
  • 1 Tbsp¬†garlic powder
  • 1 Tbsp¬†onion powder
  • salt and pepper to taste


  1. Place 1/2 cup flour in one bowl, egg and milk mixture in another and other 1/2 cup flour, bread crumbs, and spices in another
  2. Dip the green beans in the flour mixture, then the egg mixture and then the bread crumb mixture
  3. Place on greased cooking sheet
  4. Bake for about 10-15 minutes or until breading starts to get crispy
  5. Serve with ketchup!
