 I was recently thinking about making Raw Cookie Dough Balls again but as I went to the store I bought a few extra ingredients and decided to switch it up. These cookies have no bad ingredients in them whatsoever. They are all natural and every ingredient is good for you! They are not super sweet but I believe they still taste great, if you have more of a sweet tooth you can add in more Medjool dates. I had a few taste testers and some really liked the cookies and others thought they were too dry and “healthy tasting”. What do you think?

Peanut Butter Oatmeal Raisin Cookies

  • 1 1/4 cups low-sodium chickpeas
  • 3 Medjool dates, pitted
  • 1/2 cup PB2 + 1/4 cup water
  • 3/4 cup Old-Fashioned Quaker Oats
  • 1/4 cup raisins
  • 1/4 cup chopped pecans
  • 2 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1 tsp cinnamon
  1. Pre-heat the oven to 350
  2. In a food processor combine chickpeas and pitted dates and blend until smooth
  3. In a bowl mix together all ingredients until everything is spread evenly throughout the mixture
  4. Scoop dough onto parchment paper on a baking sheet, press the dough down into whatever shape you want and cook for 10 minutes
