My co-workers birthday is tomorrow but my boss and I decided to celebrate today (Monday) and it was my duty to come up with a healthy dessert for him. I wanted to make it super healthy but still delicious and I ended up altering these http://healthyisalwaysbetter.tumblr.com/post/19831216799/beccasfitlife-clean-eatings-banana-peanut! They are SO good, they are definitely one of my favorite cookies now! I gave a few to some other people as well to try them out and everybody loved them! They are easy and quick to make, have no added sugar, are vegan AND taste great!

Vegan Peanut Butter Carob Chip Cookies

Ingredients

  • 2 cups white whole-wheat pastry flour
  • 2 Tbsp ground flaxseed
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1 medium banana, mashed
  • 3/4 cup pure maple syrup
  • 1 cup all-natural peanut butter
  • 2 tsp pure vanilla extract
  • 1 cup vegan carob chips

Directions

  1. Preheat oven to 350°F. Line a large baking sheet with parchment paper
  2. In a medium bowl, combine flour, flaxseed, baking soda and salt. Set aside
  3. In a large bowl, mash banana with a fork. Stir in maple syrup, peanut butter and vanilla until well combined
  4. Add flour mixture to banana mixture, stirring just to combine; do not over-mix. Fold in carob chips
  5. Drop dough by rounded tablespoons onto baking sheet. Bake for 10 to 12 minutes, until lightly browned
  6. Transfer sheet to a wire rack to cool slightly, about 2 minutes. Remove cookies from sheet and let cool directly on rack
