This is a great way to sneak in vegetables into a meat dish! You can tell it is there but it really enhances the flavor. I also am normally not a huge fan of carrots but I actually like them when I cook them this way! Great, quick and healthy family meal!

Pumpkin Sloppy Joes w/ Green Beans and Carrots

Pumpkin Sloppy Joes

Servings: 4

Ingredients

  • 1 pound lean ground turkey (99% lean)
  • 6 tablespoons finely chopped onion
  • 1/2 cup ketchup
  • 4 tablespoons tomato paste
  • 1/2 teaspoon chili powder
  • Dash ground cloves and nutmeg
  • Dash pepper
  • 1 1/2 cup canned pumpkin
  • 4 whole wheat hamburger buns, split

Directions

  1. In a large skillet cook beef and onion over medium heat until meat is no longer pink
  2. Add the ketchup, tomato juice, chili powder, cloves, nutmeg and pepper. Bring to a boil. Stir in pumpkin. Reduce heat; cover and simmer for 15-20 minutes or until heated through
  3. Serve on buns

Steamed Green Beans

Ingredients

  • 1 pound green beans, stem ends removed
  • 1 garlic clove, smashed and peeled
  • ½ Tbsp butter
  • 1 Tbsp lime juice
  •  Dash salt and pepper
  • 1 cup water
  1. Place everything in a 2-quart shallow microwave-safe dish with a cover and microwave on high until beans are crisp-tender, 6 to 7 minutes. Stir, and pour off excess liquid

Honey Balsamic Carrots

Servings: 4

  • 2 cans no-salt carrots
  • 1 Tbsp honey
  • 3 Tbsp balsamic vinegar
