Oh. My. Gosh. I love this stuff. It is very addicting. It is my favorite thing to eat when I go to Chuys or Hula Hut but it makes me feel sick because it is so creamy and rich (and dairy). I came up with a solution…Homemade VEGAN Chuys Jalapeno Ranch Dip. My parents came in this past weekend and instead of going out to eat for dinner I decided it would be nice to stay in. I served 3 different types of salsa with blue corn tortilla chips for everyone to munch on while Josh and I prepared dinner. We made a healthy shrimp salad and topped it with this dip…what a hit! No one knew it was vegan, but everyone loved it! Try it for yourself and let me know what you think! It can also be made fat free and non-vegan by replacing the mayo with non-fat Greek yogurt! That will also take down the sodium in the vegan version. This dip is great and WAY less calories and fat and you can eat a bigger serving versus the restaurant dip.

Chuys Jalapeno Ranch Dip

Servings: 6 (same portion size as mine)

Ingredients

  • 2 cups low-fat vegan mayonnaise
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 4 tsp fresh parsley, chopped
  • 3/4 cup unsweetened coconut almond milk
  • 1/2 cup roasted, diced green chiles (canned)
  • 1/4 cup jalapenos, chopped
  • 2 Tbsp lime juice
  • 4 Tbsp fresh cilantro leaves, chopped
  • 2 tomatillos, chopped

Directions

  1. Place all ingredients in a large bowl and use a immersion blender until smooth or puree in batches in a blender or food processor
  2. Serve with chips or add a bit more coconut/almond milk to use as a dressing!
