Oh. My. Gosh. I love this stuff. It is very addicting. It is my favorite thing to eat when I go to Chuys or Hula Hut but it makes me feel sick because it is so creamy and rich (and dairy). I came up with a solution…Homemade VEGAN Chuys Jalapeno Ranch Dip. My parents came in this past weekend and instead of going out to eat for dinner I decided it would be nice to stay in. I served 3 different types of salsa with blue corn tortilla chips for everyone to munch on while Josh and I prepared dinner. We made a healthy shrimp salad and topped it with this dip…what a hit! No one knew it was vegan, but everyone loved it! Try it for yourself and let me know what you think! I played off of this recipe http://viviangrant.wordpress.com/2011/02/05/vegan-ranch-dressing-and-chuys-inspired-creamy-jalapeno-sauce/. It can also be made fat free and non-vegan by replacing the mayo with non-fat Greek yogurt! That will also take down the sodium in the vegan version. This dip is great and WAY less calories and fat and you can eat a bigger serving versus the restaurant dip.
