This was the first meal I cooked in our new house once we were finally settled in. The chicken was very tender with a slightly sweet orange taste. It paired great with broccoli and baked potato chunks. We saved the leftover chicken and chopped it up with asparagus and tossed it into some quinoa for dinner the next night.   • 1/3 cup light mandarin orange juice and mandarin pieces (from a can)
  • 1/3 cup maple syrup
  • 2 Tbsp balsamic vinegar
  • 1 1/2 tsp Dijon mustard
  • 1/8 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried basil
  • 4 boneless skinless chicken breast halves (6 ounces each)


  • Pre-heat the oven to 375
  • In a small bowl, combine the mandarin orange juice and pieces, syrup, vinegar, mustard, salt, pepper and basil
  • Place chicken on parchment paper on a baking sheet with a lip and pour the sauce over the chicken
  • Cook for 30-45 minutes
