Yes, you read that right…spinach granola bars…and they are fantastic! I am always looking for new breakfast ideas and decided I wanted to make granola bars but wanted to have some sort of vegetable in them and no sugar of course. These might look a bit strange being green and all but I just taste the honey/maple syrup in them! Great for breakfasts on the go, I cut and froze them so I could take a few out and let them thaw overnight to grab in the morning and pair with my coffee and almond milk 🙂 I cut them in to 12 pieces (good for a snack) but for a more filling breakfast I will eat 2 so the nutrition information will be based off of that.
Spinach Granola Bars

Ingredients
- 2 cups old fashioned oats, divided
- 1 Tbsp cinnamon
- 1 cup spinach puree (about 3 cups fresh in the food processor)
- 1/6 cup raw wild honey
- 1/6 cup maple syrup
- 1 tsp vanilla
- 1/3 cup slivered almonds
- 1/3 cup raisins, no sugar added
Directions
- Pre-heat the oven to 300
- Place 1/2 cup of your oats into a food processor and process until oats have reached a flour-like consistency
- In a large mixing bowl, combine the remaining dry ingredients (except for the raisins and toss the ingredients until all are well incorporated
- In another mixing bowl, combine the wet ingredients and whisk until smooth and add to dry ingredients
- Stir until dry ingredients are mixed into the wet ingredients and carefully fold in your almonds and raisins
- In a 9×9 baking pan lined with parchment paper transfer the granola bar mixture into the pan. Using your hands, press the granola mixture into the pan so it is even
- Bake for 25 minutes. Let cool completely before cutting into 12 bars
