I used to not really ever care for chocolate chip cookies….until now! One night I decided I really wanted to make cookies and Josh requested chocolate chip. I went to the store and bought a few ingredients and these amazing things were the result!!! They are soft and chewy with a slight molasses/salty flavor and the milk chocolate chips hit the spot! I have now made these several times and they always run out quickly!

Yields- 24 cookies

Prep/Total Time: 20 minutes

Ingredients

  • 1.5 cups coconut sugar
  • 2 eggs
  • 2 Tbsp vanilla
  • 2 Tbsp butter extract
  • 3/4 cup grapeseed oil
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2.5 cups whole wheat flour
  • 2 cups milk chocolate chips

Directions

  1. Pre-heat oven to 375 F
  2. Line 2-3 baking sheets with parchment paper
  3. In a bowl combine sugar, eggs, vanilla and butter extract. Beat with a mixer for 2 minutes on medium speed
  4. Turn mixer on low and add grapeseed oil. Beat until evenly combined
  5. With mixer on low add in baking soda, salt and flour. Mix until evenly combined
  6. Fold in chocolate chips
  7. Drop spoonfuls of dough onto prepared baking sheets 2 inches apart
  8. Bake 9-11 minutes until edges are golden
  9. Allow to cool on baking sheet for 3 minutes and then transfer to wire rack to continue cooling
