I used to not really ever care for chocolate chip cookies….until now! One night I decided I really wanted to make cookies and Josh requested chocolate chip. I went to the store and bought a few ingredients and these amazing things were the result!!! They are soft and chewy with a slight molasses/salty flavor and the milk chocolate chips hit the spot! I have now made these several times and they always run out quickly!
Yields- 24 cookies
Prep/Total Time: 20 minutes
Ingredients
- 1.5 cups coconut sugar
- 2 eggs
- 2 Tbsp vanilla
- 2 Tbsp butter extract
- 3/4 cup grapeseed oil
- 1 tsp baking soda
- 1/4 tsp salt
- 2.5 cups whole wheat flour
- 2 cups milk chocolate chips
Directions
- Pre-heat oven to 375 F
- Line 2-3 baking sheets with parchment paper
- In a bowl combine sugar, eggs, vanilla and butter extract. Beat with a mixer for 2 minutes on medium speed
- Turn mixer on low and add grapeseed oil. Beat until evenly combined
- With mixer on low add in baking soda, salt and flour. Mix until evenly combined
- Fold in chocolate chips
- Drop spoonfuls of dough onto prepared baking sheets 2 inches apart
- Bake 9-11 minutes until edges are golden
- Allow to cool on baking sheet for 3 minutes and then transfer to wire rack to continue cooling
